Spicy almond and Pepper sauce with Bertyn spelt seitan

Serge Restiau, culinary chef and aikido practitioner, has managed to make a lovely spicy pepper sauce without adding calorie-rich cream and without cholesterol, animal products (100% vegetarian and 100% vegan) and with very few calories.

The base of the pepper sauce is (the slightly binding property of) home made almond flour. The almond flour is almost totally (98%) made from whole organic almonds from Andalucía (Spain). It is pressed into highest quality organic almond oil at the sister company (Noble-House). The residual press cake is low-fat and high in almond proteins and almond carbohydrates.
Mixing this low-fat organic almond flour with tamari produces a rich, unique almond milk. A subtle mix of black, pink and white pepper and a whiff of cayenne, coriander and nutmeg are subsequently added to the almond milk. The result is a low-calorie pepper sauce with a great flavour and very spicy finish.
