Preparation of vegetarian stew with basmati rice, soya sauce and seitan

  1. Rinse the leek, carrots and mushrooms.
  2. Peel the celery and cut into equal pieces.
  3. Heat up a large pan (7 l or bigger) with a little oil in it.
  4. Unwrap the seitan, carefully squeeze it out and then cube the seitan.
  5. Peel and dice or cube the garlic.
  6. Cook at a high temperature for 5 to 10 minutes, then add the vegetables and fry gently for another 10 minutes.
  7. Cool with white wine and cook on high for another 5 minutes or so.
  8. Then add the water, the bay leaves and the vegetable bouillon.
  9. Taste, and if you prefer your stew a little spicier, add more Botanico-mix.
  10. Cook slowly, for a delicious low carb stew.
  11. Cook the stew for 25-30 minutes over medium heat.
  12. Check occasionally whether the vegetables are cooked. They should be al dente.
  13. After 10 minutes add the basmati rice and let it cook.
  14. Once the vegetables are done, remove from the heat and season the stew with the wild garlic pesto, soya sauce, pepper and the herbs and allow to draw for 5 minutes.
  15. Finally, add the fresh radish sprouts, stir quickly and serve the vegetarian stew warm.

Tip of Stefano:

Can a stew be healthy?

A stew is a dish that you leave to ‘stew’ on a low flame until it is cooked. A stew is often made using only a little bit of fat, with wine or water added to the pot. This is to prevent the food from cooking further with the lid on, and the dish remains juicy. It is not always necessary to add additional liquid to a stew, as liquid could already be present in ingredients like the vegetables.

The primary purpose of stewing is to ensure that tough vegetables or other ingredients become softer and the flavours combine. Thanks to the full flavour of a stew, we commonly use the method to create a delicious dish. This means it is perfect if you are following a diet. You won’t miss out on any vitamins and minerals that dissolve in water or fat, as the sauce is also eaten.

At the age of 33 he was going with all guns blazing, but he didn't spare a thought for his own health - he smoked, drank a lot, worked up to 16 hours a day and drank around two litres of coffee daily. Then he developed two serious hernias, as well as being very overweight. He realised that he could not continue this way and decided on a complete turnaround. He quit drinking and smoking and slowly changed his diet, until he finally went almost completely vegan.Vegan, a step further than vegetarian Stefano's recipes are all vegan. “Always buy the best quality seitan. The seitan you find in your average supermarket is often very tough. Seitan should have a tender texture. Organic health stores stock delicious seitan (I don’t often like to mention a brand, but Bertyn’s seitan is excellent).”
